Kale and Spinach Casserole

This is one of my (Sandra's) grandmother's recipes, and a great way to enjoy kale.
It takes around 20 minutes to prep and about 20 minutes to bake. A great main dish full of greens.. Remember that the greens shrink a lot when you cook them so it will look like a lot more than it is before you start cooking. Read more to see the recipe.
1lb spinach
1lb kale
onions and garlic
cheese
1 cp sour cream or yogurt
3 eggs
poblano pepper slices
mushrooms
salt and pepper, optional spices: cumin and/or parsley
butter
Boil some water and toss in the greens for 3 to 4 minutes. Strain and let cool. Butter a baking dish. Mix eggs with yogurt/sour cream, mushrooms, spices, onions and garlic. Chop greens once they are cool and mix with the rest. Add cheese on top and then the poblano slices. Bake at 350F for about 20 minutes, then broil to get the cheese nice and golden looking.
